450g of high quality white chocolate 1/2 cup slivered pistachio 1/4 cup diced dried apricots 1/4 cup dried cranberries 2 crushed candy canes 1/2 teaspoon of peppermint extract (optional)
1. Line a 20cm x 20cm baking tin in baking paper. 2. Melt chocolate in a microwave in 30 second increments until completely melted. 3. Stir in peppermint extract. 4. Pour into a tin and sprinkle slivered pistachios, cranberries, apricots, and candy cane. 5. Allow to cool for 45 mins then place in the fridge for an extra 20 mins. Break off and enjoy.
